Strawberry cheesecake


It's strawberry season and the fresh berries are ripe and ready to eat and enjoy in many ways at the dinner table. This time I have chosen this classic, decadent and delicious dessert.

Ingredients:
  • Strawberries
  • Almond flakes
For the bottom: Ø26 cm
  • 1+1/2 cup biscuit crumbs or cracker crumbs
  • 3 Tbsp. (if possible brown) sugar
  • 1/2 cup melted butter
For the cream:
  • 1 cup cottage cheese
  • 500 g Mascarpone or Azurro
  • 1 cup brown sugar
  • 2 Tbsp. flour
  • 1 p. vanilla sugar or ¼ teaspoon vanilla aroma
  • 2 eggs
  • 1/4 cup milk
/1 cup = approx. 2,5 dl/

Directions: 

Mix biscuit crumbs, sugar and butter. Press firmly into bottom of pan.
Preheat oven to 180 Celsius (356 F).
Beat cottage cheese, mascarpone, sugar, flour, vanilla sugar, eggs and milk 5 minutes on medium speed, then15 minutes on high speed until well blended.
Pour into crust. Bake 40-45 minutes. Let it cool in the oven!
Wash and slice strawberries. Top cheesecake with sliced strawberries and almond flakes. Refrigerate at least 4 hours before serving.
Serve with strawberry jam or strawberry syrup.

Honey caramel milk

Whenever I yearn for a healthy late night "snack", or just wanna drink something but no coffee or tea, I surprise myself with this easy delicious tidbit.

Ingredients (for 1 person):
  • 200 ml milk
  • 1 Tbsp. honey
  • ground cinnamon
  • 1 pinch ground nutmeg
Directions:

Caramelize the honey over low heat, stirring the honey constantly with a wooden spatula. As soon as the honey reaches a golden brown color and starts to emit a nutty aroma, remove the saucepan off the heat. Gradually add milk mixed with ground cinnamon and nutmeg. It must be constantly stirred with an eggbeater and cooked until the honey gets melted. (From stirring it gets soft and creamy). Serve hot, decorate with ground cinnamon.

Garlic butter with fresh chives on baguette

Sometimes the basics are the best! I have used this simple recipe for a wonderful chicken soup with rice and vegetables. Now I decided to create an improved version which can be served for breakfast but picnic or sandwich party as well.

Ingredients:
  • 100 g unflavored butter 
  • 2 cloves garlic
  • salt, pepper
  • chives
Directions:

Crush garlic cloves and mix into softened butter, the amount of butter to garlic will depend on your taste. Add salt and pepper. Cut chives up into small pieces and mix it with the butter "paste".
Slather on fresh crispy baguette, top with finely chopped chives.
