Real Bavarian mood - Brotzeitteller

Oktoberfest in my beloved Munich is over this year. Unfortunately I don't live there anymore and I didn't have to opportunity to go there this year to celebrate Oktoberfest with all my friends I left there. (I hope next year, maybe) Sometimes I miss the good old times so much. I miss Munich, I miss everything from there.

Ingredients: (2 persons)
  • 2 db Bavarian bread roll (or Bavarian pretzels)
  • few slices of cheese (I used smoked cheese because I simply love that)
  • meatloaf (Leberkäse) 
  • any kind of German sausage
  • radish (or as Bavarians call it, Radieserl) 
  • pepper cut into thin strips
  • 1 Tbsp. egg cream with chieves (if you have the possibility, use Obazda)
  • sweet and Dijon mustard (for serving) 
Directions:

It's not a recipe, so you actually don't need any directions or hints. It's culinary adventure mixed with nostalgia. 
So long story short: Take a place. Much better if you take a wooden board or a wooden cutting board. (Unfortunately I don't have such a thing home, so I sticked with ceramic boards.) 
The key: Serve all the ingredients nicely on the board. Don't forget mustard and a lovely glas of real German beer (best choice is a light wheat beer.) Enjoy your meal!

Note: I missed a few things from my plate - which are very important on a traditional German Brotzeitteller plate - because I don't really like them or simply couldn't buy them at the place I live now. BUT to be precise, I can't finish this post without mentioning and offering them to you: Sülze (head cheese), pickles, Obazda (cheese spread).

Breakfast sticks


Except for weekends, breakfast is often the meal that either gets ignored or rushed through. Grabbing a piece of apple while drinking the last drops of your coffee as you head out the door? Sounds familiar, ha? Well, with creative and inspirating ideas such as a flower shape fried egg or this one here not anymore!

Ingredients:
  • 2 slices of toast bread
  • 150 g ham
  • few slices of zucchini
  • a few small pieces of red paprika
  • smoked cheese
Directions:

Toast the bread slices then cut them into small pieces. Do the same with ham, zucchini and paprika.
Thread the pieces according to your taste onto the skewers.
/If you think, that eating raw paprika and zucchini you simply cannot accept, roast them/
 Serve the skewers on cheese bed.

Flower for a flower!

Today it's a wonderful sunny day! And a day like this requires something creative and heart-warming, which was inspired by a good friend of mine.
Well, it's not really a recipe. (Almost) everybody can make fried egg. It is much rather a good idea to make our beloved ones smile, even on a tough morning.

Ingredients:
  • 1 egg
  • salt, pepper
  • butter
  • flower form
Directions:

Melt butter in a frying pan over medium-law heat. Place the flower form in it.  Crack the egg into a bowl and carefully let it slide into flower form. Add salt and pepper to taste if desired. Fry the egg until the egg white has solidified and set. 
Serve hot, decorate with chives. Make leaves and stalk from chives. Enjoy your meal!

Tuna pate

Fish rarely gets on our dining table as for the fact that my beloved one doesn't really show enthusiasm for it.  But I love it, so sometimes I trick him and smuggle a few bites -masquerading it - in front of his nose. Sometimes the trick works, and food ends up in his stomach with the compliment: "Hm.. that's not that bad..." So happened with grandma's recipe tuned up with new ingredients as well. Happiness is in the air!

Ingredients:
  • 1 can of tuna
  • salt, pepper
  • 1 Tbsp. margarine
  • 1/2 Tbsp. mayonnaise
  • 2 drops of lime juice
  • fresh parsley, finely chopped
  • 1 clove garlic, pressed

Directions:

Mix all the ingredients, and stir it until smooth. Put into refrigerator for a couple of hours.
Serve on fresh white bread or take a piece of crackling scones. Slice it into 3 and fill the layers with the paste and serve it as a sandwich.

Summer sandwich


An idea how to create a delicious and healthy breakfast even on the busiest days.

Ingredients:
  • 2 slices of toast bread
  • Philadelphia cream cheese
  • 4 slices smoked ham
  • zucchini (tiny sliced)
  • sandwich skewers
Directions:

Roast the bread slices. Spread cream cheese on bread slices. Put ham and zucchini on them and your sandwich is done. Decorate with sandwich skewers and serve.

Garlic butter with fresh chives on baguette

Sometimes the basics are the best! I have used this simple recipe for a wonderful chicken soup with rice and vegetables. Now I decided to create an improved version which can be served for breakfast but picnic or sandwich party as well.

Ingredients:
  • 100 g unflavored butter 
  • 2 cloves garlic
  • salt, pepper
  • chives
Directions:

Crush garlic cloves and mix into softened butter, the amount of butter to garlic will depend on your taste. Add salt and pepper. Cut chives up into small pieces and mix it with the butter "paste".
Slather on fresh crispy baguette, top with finely chopped chives.
