Zucchini nuggets

If you are tired of simple stuffed or fried zucchini, but you can't stop enjoying the awesome taste and wonderful color, try this one. I can assure you that you will love it!

Ingredients:
  • 1 unpeeled, grated zucchini
  • 1 egg
  • salt, pepper
  • 2 cloves garlic
  • parsley
  • bread crumbs
  • oil fro frying
Directions:

Preheat your deep- fryer / deep fry pan.
In a large bowl, beat eggs until foamy, stir in grated zucchini. Add salt, pepper, pressed garlic and so much bread crumbs that makes your 'dollop' is easy to form with your wet hands.
Create small balls and make them flat between the palms of your hands.
Deep fry the flat balls for 5-10 minutes, depending on the heat of your stove/temperature of your deep-fryer and the size of your balls.
When the bread crumbs go a dark brown color, remove them carefully, and rest them for 5 minutes on some paper towels to drain some of the oil.
